It's a fermented product, so those dates are more of a guideline. Also, buttermilk is like sour cream or tomato paste; recipes only ever call for a portion of the container so you are always left with too much to throw out and it sits there until the sell by date startles you into a refrigerator purge. Sometimes I even end with 2 or 3 half empty containers of sour cream.
